Agriculture and Food of Greece: Local to Global

Greece is recognized for its fundamental contributions in establishing and shaping Western Civilization through government, science, arts, sports and more. Immersion in Greek culture will foster greater understanding of the origin of many of their own values, beliefs, and biases as we focus particular attention on farming and food.

Students will spend 25 days visiting Thessaloniki and Athens while studying agricultural systems, food processing and distribution, and culinary traditions at local to global levels. The trip will include farm and market tours; food tastings; lectures by Greek agricultural scientists, farmers, winemakers, and chefs; hands-on experience in food preparation and cooking; hiking and boating excursions to historical and natural areas, tours of commercial and traditional food processing facilities; and visits to archeological sites.
